Pastry chef Frédéric Madeleine has tried to bring France’s Normandy all the way to Tokyo.
After graduating from junior high school, he immediately entered the world of patisserie.
After polishing up his skills at a number of famous hotels, patisseries and three-star restaurants, he opened his first own store, Le Pommier, in October 2005.

With that said, Frédéric Madeleine is meticulous when it comes to choices of ingredients.
Years of experience have built up his insight to notice subtle changes in the ingredients whenever the season starts transitioning.
How to keep the aroma, acidity, and sweetness of the ingredients enriched, even more than the ingredients themselves is his basic stance in making pastries.

15 years since the opening, “Pommier” has been second to none as a specialty, and it is definitely my favorite gateau. To know the secret of its hexagonal shape, you’ll have to walk into my boutique and lower your gaze at it. You will notice something for sure.


This idea came from the Camembert of my hometown in Normandy. This is an unique and one-of-a-kind pastry that can only be found at Le Pommier. Is it Camembert-flavored chocolate? Or is it chocolate-flavored Camembert? You’ll have to try to know the answer.

Chocolate is the most delicate of all pastry. A tiny error of one degree Celsius could change the result completely. It is no exaggeration to say that many years of craftsmanship are packed into this “1000yen apple”.
